Live Brave


  • Earlier this month I posted about my word for 2013 - Grace.   Just as a reminder, grace is defined as:

                                                                 1. a:  unmerited favour
                                                                     b:  a virtue coming from God
                                                                     c:  God's gift to me


    When I started this journey I didn't have any real expectations about where it would take me. I sort of wanted to feel it out, be open to where ever this journey took me and so I decided not to put any goals or actions against it.

    This month I have spent a lot of time focusing on what it means to live by grace. I have been trying to pin point what that actually looks like. I know that grace is God's unmerited favour but how does it translate into living. Does it mean that every good thing that happens is automatically grace.  Or is grace something else entirely?  I don't have any answers, but I have been asking God to teach me what living by grace really means. 

    So I am looking forward to the days and months ahead, to the learning and experiencing, to the journey that I am on. Leave me a comment and let me know what you feel living by grace means.

    This recipe was so easy to make and only took a short time to prepare and cook. Plus, using this for breakfast each morning at work has meant that I could have a little more of a lay in each day - perfect!

    The great thing with this recipe is that you could add pretty much anything that you want into it and it will work. So if you fancy being adventurous then by all means go ahead.

    Servings: 5-7
    Prep Time: 15 minutes
    Cook Time: 30 minutes
    Syns per serving: 0

    Ingredients

    4 Eggs
    Mushrooms
    1 Red Chili
    Bacon
    500g Fat Free Cottage Cheese
    Onion
    Sweetcorn
    Mixed Peppers

    Method

    1. Heat oven to 200 degrees.

    2. Mix the eggs together, but just enough to mix them and not beat them.

    3. Add the cottage cheese to the egg mixture.

    4. Using Fry Light cook your mushrooms, bacon, red chili, onion, sweetcorn  peppers and anything else you want to add.

    5. Add this to your flan dish and then top with the egg and cottage cheese mixture.

    6. Cook for 30 minutes or until firm.

    This is lovely for a breakfast meal or as a lunch with salad or warm veg. Yum!

    I have heard so many good things about Essie and all their nail polishes but as of yet I haven't really wanted to pay out the money for these little bottles.  I love painting my nails but hate it when they only last a few days. While I love beautiful nails, I am far from careful with them, and so I know that if I do go to the trouble of painting them, I need to always use a base and top coat.

    Both of my basic store brand bottles were almost finished so I decided to spend an hour or so walking around Boots having a look at my different options.  While strolling along I came across the Essie stand and as I still had some vouchers from Christmas I decided to treat myself. I came home with Good to go, all in one base and Chinchilly.

    I was so pleased with the quality of these items. I started with the All in One coat which nourishes and enriches my nails and once dried I moved on the colour. While the chinchilly colour was thick and full of colour, I decided that two coats of color were best. After about 15 minutes I then put the Good to go top coat and loved how this not only provided great cover but is also a quick dry and chip proof coat.

    And what was my first experience of using them like?  Well here I sit, 5 days later, and I don't have one chip.  I love these products and despite the price tag on them, I think I am hooked for life!

    1. I went on a bit of a shopping spree in Boots last weekend and came home with all sorts of loveliness.
    2. I lost 3 lbs this week which meant that I achieved my half a stone award.
    3. We have had more snow this week and it sure did make for a beautiful photograph.
    4. I bought my very first Essie nail polish and boy oh boy have I fallen in love!
    5. I got flowers from my lovely friend this week. Its been a really tough week and she wanted to make me smile - it definitely did indeed.

    Being grateful is hard work.  With all the things that are going on at the moment I am finding that being grateful is requiring me to show up.  It is so easy to get swept away with the busyness and stress of the day that taking a moment out of that day to be grateful is so hard.
    So I wanted to take a moment to remind myself that it is important for me to show up, to stop and breath, to be grateful for the life that I have been given.
    Sitting here right now, I am gently reminding myself that whatever I find myself doing or whatever my day is throwing at me, I will remember to be grateful for everything that I can. 
    I am grateful for me.
    For my life.
    For my gifts and talents.
    For the difference that I am making to those around me.
    I’m thankful that in this great big world, God's plan for me is currently in progress.

    It's not very often that I get a chance to bake anymore. The thing is, is that while I love baking I end up having to eat it all.  Now most people wouldn't see that as too much of a hardship, but for me it would definitely be counter productive to my health journey.

    So when I come across lighter versions of my favorite treats or snacks - I have no choice but to get baking.


    Servings: 8
    Prep time: 15 minutes
    Cook time: 12 - 14 min
    Syns per serving: 1

    Ingredients

    3 eggs
    6 tbsp sweetener
    1 options chocolate or 11g Cocoa powder
    1 mullerlight yogurt
    50g Flour
    1 tsp vanilla extract

    Method
    1. Preheat the oven to 180°C/Gas 4.
    2. Whisk egg whites and add the sweetener a little at a time.
    3. In a separate bowl beat the egg yolks, yogurt, vanilla and the options or cocoa powder.
    4. Gently fold in the egg whites and fold in the flour.
    5. Fill 8 muffin cases and bake for 12 - 14 minutes.
    Hope that you enjoy!

    There are so many options that you could do with this, instead of the chocolate options consider trying the white or mint options and consider using flavored yogurts for example cherry or strawberry. Whatever you think will go together.  The one other tip that I would give is that I would cook them for fourteen minutes rather than twelve as they were still a little "wet" in the middle.

    Hey baby, its cold outside.  Snow is currently falling and is set to continue like this for the next four days at least. Its gorgeous when its so fresh and white like it currently is and I am looking forward to hibernating with some home made cupcakes and catch up on Sky+
    Currently…
    Obsessing over:  The ongoing snow blizzards that are set to cover the country. Treats - check. Milk - check. Movies - check. Comfy clothing - check. 
    Working on: Figuring out my study plan and course schedule for the next nine months.
    Thinking about: My £231 that I have been awarded from PPI by the bank which I was not expecting. It's always nice to get a surprise in January. Now what oh what am I going to spend it on?
    Anticipating: The evening weekend Cadbury's cream egg treat.
    Listening to: The Big Bang Theory
    Drinking:  A lovely cup of Yorkshire tea.
    Wishing: I had already chopped up the butternut squash. Love eating it, hate preparing it.

    I'm late. Most of these sort of posts are done in the first few days of January however I wanted to spend a little more time looking at what my plans are for 2013 and how I want to achieve them.  I don't want these plans to swept under the carpet in a few months time because they didn't fit into what I actually want to achieve for this year, or because my expectations on myself were too high.  I want them to be specific, realistic, and broken down into a month by month plan to keep them achievable.

    The first week of 2013 I decided that I was going to spend some time fasting and praying about the year ahead. I spent a lot of time thinking and praying about my life and I realised that this year I wanted to shift my focus to being different in my daily life.  I want to make small changes each month that will impact that daily life.  These changes will cover my priorities and will help me to focus my energy on the right things for me. I am so excited about what 2013 will bring.


    2013 goals & priorities

    These are the five priorities I set for this year:
    1. Take care of myself emotionally & physically - including focusing on living my personal boundaries
    2. Focus my energy on doing well at Uni and at work 
    3. Nourish and my relationships with friends & family
    4. Be open to opportunity and possibility
    5. Have more fun, try new things and be happy in who I am 

    The way that I'm putting these into practise in January are... 
    January Intentions
    • Spend time in God's word each day - For me, this is very important to me. I know that it would be more ideal for me to do this first thing in the morning but I know that if I set up my intention as such it would not be long before the snooze button wins out. 
    • Blog twice a week - I think that starting with twice a week is a good place to start.
    • Create a study planner and include some rest time - I have realised that being organised is key to doing well at Uni. I also understand the importance of blocking out free time in which I can rest and have some fun. 
    • Maintain focus on my health journey - I plan to ensure that no matter what happens this month that I will be going to each and every weigh in. I also want to remember the importance of celebrating success along the way.
    • Find a new job - This is a big deal for me at the moment. While I know I probably wont be working in that new job by the end of January, I do intend to be already applying for new roles.

    1. Cooked my very first meal from Jamie Oliver's 15 minute meals recipe book - it took me 45 mins!
    2. One and a half pounds lost this week - four and a half in total now.
    3. The studying has really begun this week.
    4. We had a girls night out and went to watch Pitch Perfect. Loved it!
    5. We are having crazy cold weather at the moment. Snow, snow and more snow!

    Weekends are just the best!  I love that I have two whole days to kickback, relax and enjoy whatever I choose.  I thought it would be nice to document my weekend just had - to give me something to make me smile during the week ahead. So, here's some of what I got up to this weekend:

    1. I caught up on my un-watched recorded Sky+ shows.

    2. Watched the sunrise. 


    3. Went to bed REALLY late.

    4. Spent time with lovely friends

    5. Took some pretty photos. 


        6. We did a lot of baking.......including slimming world cupcakes ( recipe to follow soon )


    7. And I went to watch Pitch Perfect with the girls. Such an awesome movie!

    1. Due to the recent floods the farmers field now looks like a lake. Beautiful to look at - probably not so nice for the farmer.
    2. First weigh in and I lost 3 lbs.......oh, and I won slimmer of the week!
    3. I appear to have a pretty bar infatuation at the moment.
    4. Cognitive Psychology here I come. First week of studying begun.

    Sunday afternoon was the great week ahead cook off!  My week evenings are so busy that I thought I would be a little better prepared for this week by cooking up a few dishes to separate and freeze.  It honestly didn't take me that long and now I have a freezer full of delicious meals.  One of the recipes that I tried this week was the Slimming World Caribbean Turkey and vegetable Stew, and here are the details below.

    Serves: 4
    Prep time: 30 minutes
    Cook time: 1½ - 2 hours
    Syns per serving: 1

    Ingredients

    1 red onion, peeled halved and sliced
    2 garlic cloves, peeled and chopped
    1 tbsp jerk seasoning
    750g skinless turkey breast steaks, cut into 3cm pieces
    1 green pepper, deseeded and cut into 2 cm pieces
    1 yellow pepper, deseeded and cut into 2 cm pieces
    1 red pepper, deseeded and cut into 2 cm pieces
    300g cherry tomatoes
    250g button mushrooms halved
    1 tbsp fresh thyme leaves
    400ml chicken stock
    1 level tbsp gravy granules
    Salt and freshly ground black pepper
    Fresh thyme leaves to garnish

    Method


    1. Preheat the oven to 180°C/Gas 4.
    2. Put all the ingredients into a large casserole dish, place over a high heat and bring to the boil. Season well.
    3. Cover the dish with a lid and transfer to the oven.
    4. Cook for 1½-2 hours or until the turkey is tender.
    5. Remove from the oven and garnish with the thyme leaves before serving.

    Who knew that making ginger bread houses were so difficult and took so much concentration!  Don't get me wrong, it was loads of fun to make it and put it together but it only lasted long enough to get a photo or two before falling to pieces.

    This kit was created with the suggestion of it being suitable for children from the age of six.  Six?  It took three adults, working together to get it to look this bad.....lol
    There is no way that children would be able to make this, but like I said, despite the evidence that you can see it really was a lot of fun to make!

    Gratitude is all about thankfulness, counting your blessings, noticing the simple things in life that bring you so much joy and taking the time to acknowledge all those things in your life that you take for granted.  It means living your life as if even the smallest of things are huge. It means being continually aware of how much you have been given in this life.  

    During the past six months God has really been speaking to me about having a grateful heart, about living a grateful life.  I'll be honest, I am not always quick to respond to God's requests but after a month of having the same message show up several times I finally took action and started to find things in my life to be grateful for every single day.



    I bought myself a pocket size journal and began to document those things during that day which I could be grateful for.  At first I found that I was having to grasp at things like "I'm grateful for a house to live in" or "Thank you that I have food to eat" and I soon realised that being grateful is actually a skill. It's something that I was really having to learn, to put effort into. It was so much easier to focus on all things that I didn't have or situations that hadn't gone the way that I had hoped for that day, but I knew I didn't want to be the type of person who lived a small and ungrateful life.   

    While I continued on my journey of gratitude, after a few weeks I found that something strange had started to happen inside of me. I started to see things in my life that  I needed to be thankful for, even though situations hadn't changed. The entries in my journal started to look more like " Thank you Lord that I have a job that pays my bills and keeps me close to home, even if the people at work are difficult to work with and I feel constantly overwhelmed."    


    During this process I have realised that this has become a way of life for me. I look forward to climbing into bed each night, ready to thank God for the day that I had.  I've also found that by living a grateful life it has shifted my focus from what my life lacks to the abundance that I already have in my life at this very moment. I feel happier even though nothing major has changed.  Being a psychology student, I am interested in how simple decisions can change a persons quality of life and so I have read a few articles on this subject and found that as well as my experience of feeling happier in myself, research has also found that continuously being grateful improves health, reduces stress and can even strengthen relationships.  

    So I want to challenge everyone reading this - consider keeping a gratitude journal. It can be for as long or as short a period of time that you choose and you can do it in whatever way is easiest and most convenient for you. Perhaps on your phone or on Facebook - whatever works best.  

    What I know, above all else, is that I want to challenge myself to live a grateful life!

    As has been the general practice for a few years now, with the beginning of a New Year brings a new word for that year.  You can read all about One Little Word here if you haven't come across it before, but basically it's a word that you choose that encapsulates how you want to live or what you want to focus on during the year ahead.

    If you hadn't yet guessed, my word for 2013 is Grace.  Grace is defined as:

                                                                     b:  a virtue coming from God
                                                                     c:  God's gift to me

    2013 has some big things that are happening in it and I know that the only way that I am going to come out of this year achieving and doing what I need to do is by God's Grace. Grace to pick me up when I am low, Grace to help me in my weaknesses.  Because I know that I can not face this year on my own or in my own strength - or lack there of.  I need God and I need his Grace - so this is the story behind my word for this year.

    Not that a word isn't enough, but I also wanted a bible verse to go along with my word. This isn't a normal tradition for me, however I know that when things get tough I will need a reminder of this - and 2 Corinthians 12:9 seemed like the perfect verse.


    To get my heart, mind, soul and spirit in the right place for this year ahead, I am going to be doing a daily 12 hour fast for the first week, starting today.  The thing that I love about the fasting is that you can choose what you want to fast from - it doesn't always have to be food.  It can be anything that has meaning to you. That being said, I am however going to fast from food.  I am looking forward to making this sacrifice, to have it hopefully bring me closer in my relationship with God.
